4 Things to do With Your Thanksgiving Leftovers

For starving college students, Thanksgiving is one of the best times of the year. Not only do you have the benefit of a glorious 4500 calorie meal, you’ll get leftovers. Here are some creative things that you can do with your Thanksgiving leftovers.

Turkey Cranberry Panini- Grab some whole grain bread and slather on some cranberry sauce, top with turkey and some sprouts or spinach and grill on both sides for a warm sandwich or, use a leftover roll for a cold sandwich.

Turkey Casserole- This is a family favorite of mine and I almost expect it after Thanksgiving as much as I anticipate Turkey on the actual day. Shred some leftover turkey, mix in you leftover stuffing, add some chopped celery and grated carrots and mix all together. Use a can of Cream of Mushroom soup to combine and slip in the oven at 350 degrees.

Turkey Cesar Salad- Top salad greens with shredded turkey, a few cranberries, and almonds for a delicious light meal after Turkey Day. If you’re feeling really ambitious, toast your leftover dressing in the oven and use for croutons to give your salad a crunch.

4 Thanksgiving Side Dishes Even a College Student Can Manage

Even if your culinary skills are lacking (due to all the $1 pizzas you consume at college), here are 4 Thanksgiving side dishes that even a college student can manage.

Simple Stuffing

  • Chop up an onion and celery and saute in half a cube (4 teaspoons) of butter until tender
  • Add 1 cup of chopped mushrooms (optional)
  • Add a bag of croutons to the pan and stir it all together (As an alternative, tear up a loaf of bread leave it out overnight to dry)
  • Add 1 cup of chicken bouillon
  • Add 1 teaspoon of dried parsley, sage, and thyme to season
  • Add 1 teaspoon of salt and pepper
  • Cover with foil and bake for 30 minutes at 350 degrees, or until steamy

Apple Crumble

  • Get a Sara Lee pie crust
  • Peel and slice 3-4 apples, then add them to the pie crust
  • Chop up 1/4 cup of butter, then mix in 1/4 cup of brown sugar, 1 teaspoon of cinnamon, and 1/8 cup of oatmeal
  • Spread the mixture overtop of the pie
  • Bake for for 30 minutes at 400 degrees
  • For best results, serve with a scoop of vanilla ice cream

Holiday Job Hunting: No Better Time Than Now, Really


You’ll discover a world of decision makers with a little bit of time on their hands. There are openings if you’ll just take advantage of them.

 

As always, the only trick to a successful job hunt is knowing what you want. As you reach out to the leaders you hope to work for, keep the following things in mind.

  1. Keep your message short and clear. Practice describing your goal until you can say it in under a minute. When you get your next boss on the phone, you need to be flawless.
  2. Find their phone number in advance. Use LinkedIn to identify the people you want to talk to. They are the managers of the groups you hope to work in. Find their phone numbers by calling into the company and asking for them by name (preferably after hours).
  3. Send your resume, on paper, in advance. Address it to the attention of the person you are going to call.
  4. Begin your call with a solid value opener. “I know you are working on X and I am in a position to really help”. You’ll know what X is by looking at their LinkedIn profile.
  5. Tell them what you want to do. 60 seconds. Max.
  6. Offer a money back guarantee. “Let me come into the office. I’ll work for a week. Then, let’s talk about whether or not you want to hire me. If you don’t, I won’t charge you.”
  7. Be persistent.
